We now know that swallows don't spend the winter at the bottom of pools as was once thought - they fly to Africa, just as geese which breed in the Arctic winter, spend the winter here. Some birds even migrate to special places, where they can moult. The comings and goings of birds - which way they go, how long it takes them, how long they live for - are well known, thanks to the efforts of bird-ringers. But there is still a lot more to learn. Dinner
The main meal of the day was eaten at 8 o'clock in formal style. Ruth Mott prepares lamb roasted on a spit, and beef cooked in a braising pan. Like most cooks of her generation, she rarely used recipe books. 'You learnt by watching,' she says,
'although if a cook did give you a recipe she usually left out a vital ingredient.' From the garden
