Puff Pastries and Brioches Following last week's demonstration of a master craftsman at work, Michel shows the classic way of making puff pastry. Their usual roles are reversed when Albert decides there has to be a quicker and better way as a short cut to get the same result. But are the results the same? Judge for yourself, as they combine their expertise to show two types of puff pastry, creating bouchees, cheese straws and millefeuilles. Albert plunges into brioche-making and reveals how easy cooking with yeast can be - and how delicious the results are!
