From the cliffs of Cornwall to the Fame Islands, from Castle Howard to Harlow New Town -this is a land of wild uplands and tamed suburbia, of rural solitude and seaside holiday camps, of industrial chimneys and landscaped gardens, of Roman walls, Georgian canals, steam engines and motorways.

To keep pace the industry has had to call on scientists to help transform the age-old ways of growing grapes and making wine. A new technology is solving the problem in California. In Europe much remains to be done if the notorious
' wine lake', much of it inferior stuff, is to be satisfactorily drained. At the same time scientists are investigating the ultimate mysteries: what gives each type of wine its distinctive taste? Why does the bouquet improve as it lies in a bottle for years? Could the effects of ageing be hastened on?
