But the men who prepare the food work in a noisy, sweaty world-in kitchens that would give the average housewife night-mares. They roast and stew and bake in a kind of madhouse of shouted commands, cancelled orders and frayed tempers.
What makes them work long hours for modest pay, often underground in steaming hot conditions?
