Order smoked salmon in a restaurant or choose a frozen cutlet of Scotch salmon in the supermarket and the chances are it was not caught by a fisherman with rod and line, netted or even taken illegally by a poacher - it probably came from a salmon farm in Scotland. A surprising amount of the world s fish protein comes from aquaculture. China supplies a vast proportion of its needs from inland carp farms; Israel is developing carp farming rapidly and the rainbow trout industry in Europe produces more than 100,000 tons.
