Order smoked salmon in a restaurant or choose a frozen cutlet of Scotch salmon in the supermarket and the chances are it was not caught by a fisherman with rod and line, netted or even taken illegally by a poacher - it probably came from a salmon farm in Scotland. A surprising amount of the world s fish protein comes from aquaculture. China supplies a vast proportion of its needs from inland carp farms; Israel is developing carp farming rapidly and the rainbow trout industry in Europe produces more than 100,000 tons. In the last ten years more than 100 salmon farms have grown up in the Scottish highlands and already they produce 3,000 tons of fresh salmon each year. Angus Morgan ,
