Four of the chefs face three daunting tests and meet Michel Roux Jr for the first time.

Four of the eight chefs face Monica and Gregg's infamous Skills Test. Then Michel challenges them to recreate his biersuppe followed by a classic dish of their own choosing.

MasterChef: The Professionals returns for its sixth series and chefs Michel Roux Jr and Monica Galetti along with seasoned diner Gregg Wallace begin their search for a culinary talent exceptional enough to take the 2013 coveted title.
 
In tonight's one-hour show, four of the eight chefs from yesterday's heat return to face three daunting tests, before Monica and Michel decide their fate. It's their last chance to show they are serious about the competition before one of them is sent home.

First up, it's Monica and Gregg's infamous Skills Test. The judges ask each chef to demonstrate their pastry skills by making three different coconut tuiles to decorate three quenelles of Chantilly cream. With only 15 minutes to cook and present both elements perfectly, the heat is on. The chefs must draw on their training and hold their nerve to show Monica and Gregg they have the technical ability to go forward in the competition.

Next, the chefs face Michelin-starred legend Michel Roux Jr for the first time when he sets them two Classics challenges. For the first test, Michel cooks the classic biersuppe and petit choux au fromage - a rich beer soup with cheese-filled choux pastry buns - before asking the chefs to recreate the dish in just 60 minutes. The chefs need to prove their palettes are spot on if they are to achieve the soup's bittersweet taste, and with no weights and measures in the recipes, they must draw on their repertoire to make the perfect choux pastry. Finally, the four are asked to cook their own choice of classic dish for Michel in just one hour, before he is joined by Monica to decide which chef will leave the competition. 

Only the best three chefs will go through to the quarter-final and move a step closer to winning the title of Professional MasterChef.
