Accustomed in the West to a varied diet, we overlook the fact that there are communities in the world that live on almost only one food source. As world population increases, so also does the necessity to tackle the food problem by all possible means. Dr. Webb describes two of these: extracting high-grade protein from vegetable waste, and growing micro-organisms on a large scale as a food supplement.
