Michelin-starred chef Michel Roux Jr must decide who his protege will be. From an original group of seven young students from University College Birmingham, Michel is resting his hopes on just two. It is crucial to Michel that his protege understands the Rouxs' classic French roots, so he asks the two students to begin by cooking two of his father Albert's iconic recipes - the souffle suisse - a dish that has been on the restaurant menu for over 30 years and the mousseline de voile, the walnut-stuffed chicken mousse.
After closely observing the students cook his father's classics, Michel sets one final test for them before he chooses who will represent him in the final. Throughout generations, the Roux family has taken mentoring very seriously and hundreds of great chefs have served apprenticeships in their kitchens. But Michel knows that there is only so much a mentor can teach, the students need to have their own creative flair, so Michel opens up the kitchen larder to the two young cooks. They must come up with one dish to impress - a dish that shows Michel how much they have learnt from him and also that they will be a worthy representative in the final.
