Slow-cooking Timetable
Oven: Low (Gas, Mark 1; Electric, 250° F. In the lowest oven of a slow-combustion solid-fuel cooker allow double the time given in the tables)
6-12 lbs: 20 minutes per lb, and 80 minutes over
13-20 lbs: 16 minutes per lb, and 2 hours over
21-30 lbs: 14 minutes per lb, and 21 hours over
