Recipe of the week:
Fish in Tomato
4 fillets of plaice or other white fish 4 large firm tomatoes 2 ozs. mushrooms
1 medium-sized onion Parsley
Salt and pepper
1/8 oz. margarine for greasing dish
Cut the tops off tomatoes and scoop out centre. Boil onion in water, chop up finely and mix with the chopped tomato, mushroom and parsley, season well. Spread mixture on fillets of plaice, roll up neatly and 'stuff into the tomato cases. Put the tomatoes into a slightly greased dish and pile any mixture over round the tomatoes. Cover with a greaseproof paper and cook in a moderate oven, Mark 5, for 25 minutes. Serve with freshly cooked spinach and raw watercress.
