Poultry between 8 lb. and 20 lb.
Tough binds: Simmer in water at just below boiling point (190°F.). Allow twenty minutes for every pound, plus 11 hours. They can be put in the oven for browning for fifteen to twenty minutes.
Tender birds: Set oven at Mark 6 for gas, and 400° for electricity. Allow seven minutes for every pound, plus forty minutes.
