Philip Harben shows that the proper way to cook vegetables is to boil them as rapidly as possible in the minimum quantity of water.
Recipe of the week:
Golden Potatoes Anna
(for four portions)
1 1/2 lb. potatoes 2 oz. dripping salt and pepper
Peel and slice the potatoes wafer thin. Arrange them in a shallow fireproof dish, each slice just overlapping the next. Dab each layer with melted dripping and season with salt and pepper. Let the pieces in the next layer overlap each other in the opposite direction. Give a final coat of dripping. Bake in a hot oven (450° F. Gas 8 or G) for about forty minutes. Serve from the dish.
