This week sees the heats for Scotland. Returning to the competition are last year’s runner-up, Stuart Ralston, chef patron of Aizle and Noto in Edinburgh, and Dundee-born Adam Handling, the youngest apprentice of Gleneagles and an award-winning restaurateur dedicated to a zero waste ethos in his cookery. They are joined by the Isle of Skye's Calum Montgomery, chef patron of the 16th-century Edinbane Lodge, and Fraser Smith, head chef at Angles with Bagpipes on the Royal Mile.
Presenter Andi Oliver welcomes them to the kitchen, where the theme for this year’s competition is a celebration of 100 years of British broadcasting. One of the four must leave the competition at the end of the episode, to be decided by this week’s veteran judge - a previous winner who remains a surprise to the chefs until the moment they walk into the kitchen to taste the first course canapes.
