Subtle textures, beautiful presentation and delicate flavourings make the cuisine of Japan a wonderful contrast to many of the other cuisines of the Far East.
Madhur Jaffrey visits Keiko and Akiro Okamoto in the hills above Kyoto, and picks wild mountain vegetables for a traditional autumn noodle casserole. In Kyoto itself she visits an old Japanese travellers' inn, famous for its tranquil atmosphere and exquisite food. Also, she investigates more modern travellers' fare. Madhur shows how to make yakitori or chicken bits on a skewer as well as a delicious Japanese salad, green beans with sesame dressing.
