Ching-He Huang goes to the far north of Scotland and prepares her version of fish and chips, gong bao haddock goujons with roast sweet chilli potato.

Ching-He Huang, the new star of Chinese cooking, continues her mission to bring fresh, easy and healthy Chinese food to the UK. She travels to the far north of Scotland in search of the finest seafood on offer. 

Ching-He cooks steamed whole seabass in hot beer with a ginger-lime sauce before setting off to Ullapool on the far north-west coast of Scotland to find some of the best langoustine in the country. After joining the fishing boats, Ching prepares a mouth-watering langoustine and samphire stir fry before heading even further north to one of the most remote fishing ports in Scotland - the tiny village of Kinlochbervie. The nearest Chinese takeaway is 60 miles away and the closest supermarket is a 120-mile round trip. But this port on Scotland's north-west coast boasts some of the finest fresh seafood in the whole of the UK. Using locally sourced ingredients, Ching prepares black bean-steamed scallops with noodles and monkfish with sesame soy sauce and chilli crab for the local fishing community. She also serves up gong bao haddock goujons served with roast sweet chilli potato chips - her own delicious version of fish and chips.

Francesco da Mosto visits Mount Parnassus, the mystical site of the great Delphic Oracle.

Francesco da Mosto continues his voyage from Venice to Istanbul, visiting Mount Parnassus, the site of the Delphic Oracle and meets Nana Mouskouri in Athens.

Architect and historian Francesco da Mosto embarks on a journey across the Mediterranean Sea. Amidst a sea of dolphins, The Black Swan enters the Gulf of Corinth off the coast of Greece as Francesco continues his voyage from Venice to Istanbul. The boat must manoeuvre under the Rio Antirio bridge and then navigate the narrow Corinth Canal, which separates mainland Greece from the Peloponnese.

At Mount Parnassus, Francesco visits the mystical site of the great Delphic Oracle, the greatest prophetess of the ancient world. She would talk in riddles but her pronouncements determined everything from events of state to romance and marriage. Mount Parnassus was also home to the Pythian games, forerunners of the modern Olympic Games.

Next stop is Athens. Often dismissed as a busy, noisy and overcrowded city, the Greeks prefer to see Athens as the biggest village in the country. Athens was the capital of the ancient Classical world and home to the Acropolis. Birthplace of western art, it is also the site of one of Venice's greatest atrocities against art and culture - an attack on the sacred temple of Parthenon that almost destroyed it. The attack also resulted in a massive loss of human life. Francesco sees the damage from the 700 cannonballs, still evident today. Francesco also has a date in Athens - the woman with the greatest singing voice ever to emerge from Greece - Nana Mouskouri. As they stroll through the romantic setting of Athens's National Gardens, can Francesco persuade Nana to serenade him?

Architecture is the stuff of dreams. Since building began, architects have tried to build the future, tried to build fantasy worlds, tried even to change humanity by dreams of new inventions in bricks and mortar. Dan continues his travels around some of the world's greatest buildings. 

In Yemen he reveals an ancient city of skyscrapers made of mud - Shibam. Originally named after its ruler King Shibam, the city is now nicknamed 'the Manhattan of the desert' due to its astonishing skyline. And in the Dominican Republic, Dan visits Santo Domingo where Spanish invaders dreamed of creating the first grid-style city on the American continent - a model for every modern American city that would follow. 

In the hidden kingdom of Bhutan in the Himalayas, Dan experiences the dream of a king to live in the past - so that modern buildings are indistinguishable from those built 500 years before. And he explores how dreams can turn to nightmare in Eastern State Penitentiary in Philadelphia, where society dreamt of reforming criminals into decent men, only to find their techniques made them mad.
