One chef's imaginative dessert uses a machine usually found in the fairground.

Creative culinary competition. Danny Gill is making a staggering eight elements for his imaginative dessert - even using a machine usually found in the fairground.

In this year's Great British Menu, the chefs are competing to cook at the ultimate banquet held the Palace of Westminster. In the year of the Queen's 90th birthday, the chefs are celebrating the everyday great Britons who have been honoured for their extraordinary achievements. The challenge is to create dishes that are a fitting legacy to the modern Elizabethan age, creating food that represents the complete transformation in British cuisine during the Queen's reign.

This week, three chefs from the central region are fighting to be crowned champion. Today, one competitor will go home - only the two highest scoring chefs will make it through to the judging chamber.

And the chefs are pushing themselves. Danny Gill is facing his toughest day yet, choosing to make a staggering eight elements for his imaginative dessert - even using a machine usually found in the fairground. And Andrew Scott is preparing not one but three complex desserts, including a doughnut that evokes all the flavours of a cream tea. And Daniel Smith's nerves set in as he attempts to set a jelly on top of a panna cotta in his modern interpretation of the classic peach melba.
