Creative culinary competition. Three chefs create fish dishes in a bid to be crowned Scottish champion. The standard is so high, the veteran judge is moved to tears.

Great British Menu is back and 24 of the nation's top chefs are competing to create the most contemporary cuisine in honour of the Queen's everyday great Britons. The prize is to cook at the ultimate banquet held at the Palace of Westminster in the year the nation celebrated the Queen's 90th birthday.

This year's challenge is to produce dishes that are a lasting legacy to the new Elizabethan age. They must showcase the transformation in British cuisine during the Queen's historic 64-year reign.

Today, three newcomers to the competition create their fish dishes in a bid to be crowned Scottish champion. The standard is so high that the veteran judge is moved to tears. The youngest competitor, Adam Handling, is celebrating the very best of British seafood and is promising a dramatic presentation at the pass. Michael Bremner, known for being inventive, is pushing boundaries with his mackerel dish. He is using some innovative techniques which honour one of Scotland's leading fishermen. And Ally McGrath is setting out to create the best of British, using Scottish salmon, although he confesses the fish is not his favourite.
