As he nears the end of his epic barge journey through south-west France, the chef sails along the salty Etang de Thau, famous for its oysters and mussels, before mooring his barge in the port of Sete, where Bastille Day is being celebrated with water jousting and fireworks. En route, he rustles up seafood ragout and roast black bream.
