Souffles have a reputation for being complicated to make and difficult to serve. However, Albert and Michel strip away the mystique, showing how straightforward and versatile they can be. Plus crepes with lime souffle from the Waterside Inn, Bray, and little Swiss souffles with mushrooms, a new version of a speciality from Le Gavroche, created exclusively for this programme.
