Souffles
Souffles have a reputation for being complicated to make and difficult to serve. However, Albert and Michel strip away the mystique, showing how straightforward and versatile they can be. In tonight's programme: mandarin and Cointreau souffles and iced strawberry souffle. Plus crepes with lime souffle from the Waterside Inn, Bray, and little Swiss souffles with mushrooms, a new version of a speciality from Le Gavroche, created exclusively for this programme.
