Shortcrust and Choux Pastry Albert takes a back seat this week, while his brother Michel, who has been winning awards for patisserie for years, shows how a master craftsman makes a basic pastry, and then demonstrates how simple and versatile choux pastry can be. In a sequence filmed in the kitchens of the Waterside Inn, Michel reveals a not-so-secret passion.
