Chefs Ben O'Donoghue. Paul Merrett and Silvana Franco offer a variety of recipes for fish dishes and chocolate puddings. O'Donoghue makes steamed monkfish with orange zest and chilli, followed by white-chocolate panacotta; Merrett rustles up hake with pancetta, squid and mussels, rounded off by chocolate fondant; and Franco creates haddock-and-mushy-pea fish cakes plus chocolate cardamom sauce. After the dishes are completed, a panel of judges selects the concoctions they deem the best of the bunch.
