Lunch in Victorian households was 'an unceremonious and inconsequent meal'. It usually consisted of cold meats and hot dishes that wouldn't spoil if left standing. Ruth Mott makes a galantine, poached eggs on spinach and a gooseberry tart, while Alison makes lunch for the staff - which in large households meant 12 or more people.
