In the eighteenth and nineteenth centuries every port and cove in Cornwall had its pilchard-curing business. Today the industry is carried on only at a few of the larger fishing ports. In this broadcast listeners will hear from those who are engaged in the industry something of the traditional methods of curing and pickling pilchards, and of the new process of canning the fish.
