Big Zuu brings big flavours and big energy to the kitchen with his sticky-spiced short ribs with suya potatoes and jalapeño coleslaw. Bryn Williams makes cauliflower the star of the show with his showstopping curried cauliflower steak with salted grapes, deep-fried capers and polenta. And Thomasina Miers rustles up one of Matt’s all-time favourite recipes – fideus with salsa negra and avocado cream.
