Fat is an essential addition to any kitchen larder but it's also been labelled as the villain of our diet - particularly in its saturated forms - is it time to rethink how we feel about fat? 

Fife's food ambassador Christopher Trotter and Professor of human nutrition Mike Lean consider why there are so many fats to choose from and how they can change and improve the meals you create and eat. 

Dan Holland has a look at the small print on a tin of coconut milk while Ghillie Basan explains how to get most from the fat of the humble coconut.
