If you're someone who likes to eat salmon regularly - and we're often told fish is good for us - how do you know what type of salmon to eat? Do you go for farmed, 'organic farmed' or wild salmon? How do you choose between them? It could come down to price, texture, taste, welfare of the fish or maybe the environmental impact of how that fish is farmed or caught. 

In this week's special edition of The Kitchen Café Pennie Latin picks her way carefully through some of the issues involved in salmon production so, as consumers, you can make a choice over which salmon you decide to buy, cook and feed the family with. And it wouldn't be The Kitchen Café without some cracking recipes to tempt you so Neil Forbes will be showing Dan Holland how to make some delicious salmon fishcakes while Sue Lawrence makes salmon with soy and noodles and Josh Doherty has the how-to for the ultimate homemade hollandaise!
