At home in Callanish, Gregor gives artic roll a modern twist. This is an adult’s version with a coffee and fudge ice cream centre and a rich dark chocolate sponge. Hosting friends for tea, Gregor takes inspiration from Morocco. He makes a filo pastry coil, known as M’hencha, filled with ground nuts and drizzled with his own Callanish honey.
