He was the greatest chef of the age. equally successful organising banquets for the wealthy and soup kitchens for the poor. In 1855, distressed by the front-line dispatches in The Times. he travelled at his own expense to the Crimea. Within a short time he had transformed the daily diet of the British soldier and won the admiration and friendship of Florence Nightingale.
