Since the first fish and chip shops opened last century Britain has jealously numbered their salted and vinegared delights among her national institutions. But in the 70s the traditional 'cod and six' is attracting a good deal of gastronomic attention from other countries - chiefly the United States. Now the rapidly growing appreciation of fish and chips in the English style has led to such an export boom in British equipment, technique, and brains that there is a serious danger of shortages at home.
