French cooking is made up of many regional specialities and Grenoble, in the province of Dauphine, is renowned for its gratin dauphinois-a potato casserole. This is one of the favourite dishes of local chef Andre Revest , who also prepares trout with almond paste, tomatoes and mushrooms a la provencale, saddle of lamb and a dessert using the local liqueur, green chartreuse.
