Everybody agrees the countryside is changing, but nobody knows exactly how. In the past 20 years, opinions have flourished like oil seed rape, while hard facts remain as rare as orchids. But all that is set to change with the launch this week of the biggest survey of the British countryside. Rupert Segar reports.
