Tonight's programme focuses on food and drink technology and includes a report on the problems caused to the makers of French cheese by a new European directive. Its purpose was to improve hygiene but it has ended up killing the bacteria that give cheese, such as Brie, its distinctive taste. Can Gallic science put bacteria back where they belong?
